It depends on your interests. But mainly it depends on the time you'll have for the visit. If you skip interiors and walk around on foot, I would say 2-3 hours are enough. Better start your wandering from Grüner Markt (Green Market) and go to the Cathedral, the Old Court buildings, then if you have time Neue Residenz with the famous Rose Garden offers splendid views around and the Museum is wonderful but you need extra time! Then the Altes Rathaus (Old City Hall) which is the highlight of your visit, because not only of the superb murals outside the building but because also of its perfect location between 2 bridges on River Linker and close to the picturesque Klein Venedig (Little Venice) houses. Making this round you'll enjoy Bamberg's exceptional architecture. The whole old city is one of the Unesco World Heritage sites. I wish you good weather and good luck!

We spent a week in Germany and decided to stay in Bamberg and Munich during the trip so we didn't have to pull our luggage around so much on the trains. We spent 3 nights in Bamberg and 3 nights in Munich. We toured Bamberg and hit all the we could in the two days and did a one day trip to Nuremburg to see it and the Documentation center. I totally loved Bamberg and if you a beer lover - this is the best stop for you. Yes you can do it in a day, but two full days is much better.
